Ingredients

Steps

  1. Prepare a bowl and add 2 eggs and 175 gr of granulated sugar, equal to 12 heaped tablespoons.
  2. Add 1 tsp of emulsifier and 1/2 tsp of vanilla powder.
  3. Beat the batter at maximum speed for about 7 minutes until it is risen, pale, thick, and holds a trail.
  4. Once the batter is pale, risen, thick, and holds a trail, turn off the mixer.
  5. Add 3 tbsp of milk powder.
  6. Add part of the 200 ml of water.
  7. Add part of the 200 gr of wheat flour then mix on low speed.
  8. Add the remaining water and flour alternately and gradually while mixing until evenly combined, so the batter does not collapse and stays risen.
  9. Add 1 tsp of pandan paste then stir again until evenly combined.
  10. Fold from the bottom up to make sure no liquid has settled at the bottom, so the cake does not turn out dense.
  11. Brush a 25 cm diameter tin thinly with margarine.
  12. Dust the tin lightly with flour, tapping it so the flour coats the whole surface, then tip out the excess.
  13. Pour the batter into the tin.
  14. Level the batter with a satay skewer so trapped air can escape, or tap the tin a few times.
  15. Heat the steamer until the water boils, then put in the tin of batter.
  16. Steam for about 25 minutes over medium-low heat, lining the steamer lid with a clean cloth so condensation does not drip onto the batter.
  17. After 25 minutes do a skewer test; if no batter sticks to it, the cake is done.
  18. Lift the tin out of the steamer and turn the cake out while it is still hot.
  19. Slice the cake and serve; you may also serve it with butter cream and toppings of your choice.
