Ingredients

Steps

  1. Set out a bowl and add 125 gr tapioca starch or about 12 1/2 heaped tbsp, 10 gr glutinous rice flour, 80 gr granulated sugar, 1/4 tsp vanilla powder, and 1/4 tsp salt, then stir until evenly combined.
  2. Add 250 ml coconut milk, then stir the batter until evenly combined and the sugar has dissolved.
  3. Strain the batter to make sure there are no lumps.
  4. Divide the batter into two equal parts.
  5. Add pandan paste to taste to one part and leave the other part white. Another flavored paste or cocoa powder works too.
  6. Prepare a 20 x 20 cm pan and grease it thinly with cooking oil.
  7. Heat the steamer until the water boils, then put the pan into the steamer.
  8. Pour three ladles of the white batter into the pan, then steam until it sets, about 5 minutes over medium heat.
  9. After 5 minutes the first layer has set; poke it to check that it is no longer watery.
  10. Stir the next batter first so no flour settles at the bottom, then pour in three ladles of the green batter.
  11. Steam for another 5 minutes until the layer sets, then repeat, alternating the colors, until all the batter is in the pan.
  12. For the last layer, steam for 10 minutes until the batter is fully cooked.
  13. After 10 minutes of steaming, lift the pan out of the steamer, then let the cake cool until just warm so it releases more easily and is less sticky.
  14. Run a knife around the edges of the cake to loosen it from the pan.
  15. Turn the cake out onto a sheet of plastic, then roll it up, pulling the plastic forward and tucking slightly so the roll is tight.
  16. Compact the roll with the help of a knife, pressing the plastic forward so the roll gets tighter.
  17. Grease a knife with cooking oil or wrap it in plastic, then slice the cake and serve.
