Steps

  1. Prepare ripe kepok bananas, or any other kind of ripe banana.
  2. Turn on medium heat, add 2 tbsp of margarine to a grill pan, then add the bananas and cook until browned; you may also boil, steam, or fry them.
  3. Once the bananas are browned, take them out and set them aside.
  4. For dough I, prepare a bowl and add 100 gr of high-protein wheat flour and 75 gr of margarine.
  5. Knead until evenly combined and the dough comes together.
  6. Roll the dough into a ball, put it into a bag or airtight container, then chill it for 15 minutes.
  7. For dough II, prepare a bowl and add 200 gr of high-protein wheat flour, 30 gr of icing sugar, and a pinch of salt, then stir until evenly combined.
  8. Add 75 gr of margarine then rub it in until the mixture forms sandy crumbs.
  9. Add 80 ml of water.
  10. Knead until evenly combined and smooth, adding a little more margarine if the dough still feels too dry.
  11. Roll the dough into a ball, put it into a bag or airtight container, then chill it for 15 minutes.
  12. After 15 minutes, take out the first dough, divide it into 16 portions of about 11 gr each, and roll them into balls.
  13. Do the same with the second dough, dividing it into 16 portions of about 24 gr each, rolling them into balls, then covering them with plastic or a clean cloth so they stay moist.
  14. Take one portion of the second dough and roll it out thin.
  15. Place one portion of the first dough on top, then fold it like an envelope.
  16. Roll it out thin again then fold it like an envelope once more, and repeat until all the dough has been folded.
  17. Cover the dough with a clean cloth then rest it for 15 minutes.
  18. After 15 minutes, prepare the filling: chocolate sprinkles, cheese cut into small pieces, and the grilled bananas cut in half.
  19. Take one piece of dough with the folded side facing up, then roll it out thin.
  20. Place a banana in the centre, then split the banana in two lengthwise all the way through.
  21. Fill it with the chopped cheese, then sprinkle over the chocolate sprinkles; the cheese may be skipped if you do not like it.
  22. Fold the dough into an envelope then fold in the ends, and repeat until all of them are filled.
  23. Place the filled pastries on a tray brushed with margarine.
  24. For the glaze, mix 1 egg yolk with 1 tsp of sweetened condensed milk and stir until evenly combined.
  25. Brush the pastries with the glaze.
  26. Add chocolate sprinkles and grated cheese on top to taste.
  27. Preheat the oven for about 10 minutes, then put the tray of pastries on the lower rack.
  28. Bake at 150 degrees Celsius with top and bottom heat for 40 minutes until the banana bolen are done.
  29. After 40 minutes, when they are done, take them out of the oven, let them cool to warm, then lift them off the tray and serve.
