Ingredients

BROWNIE ingredients:

Chocolate Ganache ingredients:

Steps

  1. Grease a 20 by 20 cm tin thinly with margarine, then line it with baking paper.
  2. Put 70 g dark cooking chocolate chopped into small pieces and 120 ml cooking oil into a heatproof bowl.
  3. Bring water to a boil in a pot over medium heat, set the bowl of chocolate over it, and melt the chocolate, then stir until evenly combined.
  4. Put 4 eggs, 120 g granulated sugar, 1/2 tsp vanilla powder and 1/2 tsp SP emulsifier into a bowl.
  5. Beat at maximum speed for about 7 minutes until the batter is voluminous, thick and leaves a ribbon trail.
  6. Sift 90 g all-purpose flour, 40 g cocoa powder and 1/2 tsp baking powder into the batter.
  7. Fold briefly so the flour does not fly out, then mix for about 30 seconds on the lowest speed until evenly combined.
  8. Turn off the mixer and continue folding with a spatula to make sure the batter is fully combined.
  9. Add the melted chocolate and oil mixture, then fold from the bottom up until evenly combined with no liquid settled at the base.
  10. Pour the batter into the tin, then tap the tin a few times so trapped air can escape.
  11. Steam for about 30 minutes over medium heat in a steamer whose water is already boiling, and wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  12. Test with a skewer; if no batter clings to it the brownie is done, then lift it out, turn it out of the tin and peel off the baking paper.
  13. For the ganache, put 250 g dark cooking chocolate chopped into small pieces and 125 ml milk into a bowl, melt it over boiling water, then stir until evenly combined.
  14. Put 500 ml cold liquid whipping cream into a bowl, then beat at maximum speed for about 3 to 5 minutes until it is thick and holds its shape.
  15. Add about 3 to 4 tbsp of the warm ganache to the cream, then beat until evenly combined.
  16. Cut the brownie to the size of the box you are using, then slice it into three thin layers.
  17. Put one brownie layer into the box, pipe whipped cream over it, then add the next brownie layer and tidy the edges.
  18. Pipe more whipped cream over the brownie, then level the cream with a spatula or spoon.
  19. Pour the chocolate ganache over the top until the box is full, then add toppings to taste.
  20. Chill in the fridge for about 2 hours since it tastes better cold.
