  1. Boil two glasses of water in a pot to set up a double boiler for the chocolate.
  2. Once it boils, put 50 g of finely chopped cooking chocolate into a heatproof bowl over the water, then add 5 tablespoons of cooking oil.
  3. Stir until the chocolate melts completely, then take it off, turn off the stove, and set the chocolate aside.
  4. Sift 10 tablespoons of medium-protein all-purpose flour, about 100 g, together with 1/2 teaspoon of baking powder and 3 tablespoons of cocoa powder into a bowl, then whisk until even.
  5. Add 6 tablespoons of granulated sugar, about 75 g, ground fine in a blender, then mix again until combined.
  6. Pour in 180 ml of liquid milk in stages, half first then the rest, stirring as you go.
  7. Pour in the melted chocolate, then fold with a spatula until everything is evenly combined.
  8. Grease a 16 x 16 cm tin, 7 cm deep, with margarine and line it with baking paper, then pour in the chocolate batter and smooth it out.
  9. Level the surface with a satay skewer, then tap the tin so trapped air escapes.
  10. Preheat the oven for 10 minutes at 180 degrees Celsius, then bake the brownies for 45 minutes at 180 degrees Celsius.
  11. Turn the brownies out of the tin, peel off the baking paper, flip the brownies over, then split them into two layers.
  12. Spread 50 g of melted cooking chocolate over one layer as the filling, top it with the other layer, then serve.
