Ingredients

CHOCOLATE PANDAN BROWNIES:

Buttercream ingredients:

Topping:

Steps

  1. Grease a tin 24 cm long, 10 cm wide and 9 cm deep thinly with margarine, then line it with baking paper.
  2. Prepare a bowl and add 4 medium eggs, 120 g granulated sugar, half a teaspoon of vanilla powder, half a teaspoon of emulsifier and a quarter teaspoon of salt.
  3. Beat on maximum speed for about 12 minutes until the batter is risen, thick and holds a ribbon.
  4. Sift 90 g wheat flour, 40 g cornstarch and half a teaspoon of baking powder into the batter.
  5. Mix on the lowest speed for about 30 seconds, only until evenly combined.
  6. Continue folding with a spatula to make sure the batter and flour are fully combined.
  7. Add 120 ml cooking oil, then fold from the bottom up until no liquid is left at the bottom of the bowl.
  8. Divide the batter into two equal parts.
  9. To one part add 70 g melted dark cooking chocolate and stir until evenly combined; you may also add half a teaspoon of chocolate paste.
  10. To the other part add 1 tsp pandan paste, then stir until evenly combined.
  11. Pour the chocolate batter into the tin, level it with a spatula, then tap the tin a few times so trapped air can escape.
  12. Put the tin into a steamer whose water is already boiling and steam for about 10 minutes over medium heat, with the lid wrapped in a clean cloth.
  13. After 10 minutes, once the chocolate layer has set, pour the pandan batter over it evenly, then level it with a spatula.
  14. Steam for about another 30 minutes over medium heat until the brownies are cooked.
  15. After 30 minutes, test the centre with a skewer; if no batter clings to it, take the tin out, run a knife around the edges, turn the brownies out and let them cool.
  16. For the buttercream, beat 100 g white shortening on maximum speed for about 10 minutes until light and glossy.
  17. Add 40 ml sweetened condensed milk, then beat for about five more minutes on maximum speed until evenly combined.
  18. Once the brownies are cold, spread the buttercream over them as thickly as you like.
  19. Top with grated cheese, then cut the brownies with a sharp knife.
