Ingredients

Steps

  1. Line an 18 x 18 cm tin with baking paper then set it aside.
  2. Prepare a bowl, add 50 gr of dark compound chocolate and 90 ml of cooking oil, then melt it over a pot of boiling water.
  3. Once the chocolate has melted, stir until evenly combined, then lift the bowl off the pot and set it aside.
  4. Prepare a bowl and add 3 eggs, 90 gr of granulated sugar, 1/2 tsp of emulsifier, and 1/2 tsp of vanilla.
  5. Beat for about 10 minutes at maximum speed until the batter is risen, thick, and holds a trail, then turn off the mixer.
  6. Add 30 gr of cocoa powder, 65 gr of wheat flour, and 1/2 tsp of baking powder, sifting them to make sure there are no lumps.
  7. Fold the batter gently from the bottom up until evenly combined so the texture stays thick.
  8. Add the melted cooking oil and dark compound chocolate mixture from earlier.
  9. Fold from the bottom up and make sure no liquid has settled at the bottom, so the cake does not turn out dense.
  10. Pour the batter into the lined tin then tap the tin a few times so trapped air can escape.
  11. Heat the steamer until the water boils, put in the tin of batter, then steam for about 20 minutes over medium-low heat with the steamer lid lined with a clean cloth.
  12. Do a skewer test; if no batter sticks to it, the cake is done, so lift it out, turn the cake out of the tin, and peel off the baking paper.
  13. Trim a thin slice off the top of the cake so it is level, then put it back into the tin and set it aside.
  14. For the chocolate pudding layer, prepare a pot and add 100 gr of granulated sugar and 1 packet of white agar-agar powder, stirring first until evenly combined so it will not clump when the liquid goes in.
  15. Add 1 tbsp of cornstarch, 2 tbsp of cocoa powder, and part of the 800 ml of chocolate milk.
  16. Stir until evenly combined so the mixture is smooth and free of lumps.
  17. Add the rest of the milk, 50 gr of dark compound chocolate, and 50 gr of white chocolate.
  18. Turn on medium heat and cook until it boils and thickens, stirring constantly so the bottom does not scorch or clump.
  19. Once it boils, thickens, and bubbles up, turn off the heat and keep stirring until the steam has gone, so the mixture stays smooth and lump-free.
  20. Once the steam has gone, pour the mixture slowly into the tin over the cake so the cake does not float up.
  21. Leave it for about 30 minutes until the surface forms a skin.
  22. For the white chocolate pudding layer, prepare a pot and add 100 gr of granulated sugar, 1 packet of white agar-agar powder, and 1 tbsp of cornstarch, then stir until evenly combined.
  23. Add part of the 800 ml of UHT milk then stir until evenly combined and the mixture is smooth.
  24. Add the rest of the milk and 100 gr of white chocolate.
  25. Turn on medium heat and cook until it boils and thickens, stirring constantly, then turn off the heat and keep stirring until the steam has gone.
  26. Before pouring the white chocolate layer, make sure the chocolate pudding has formed a skin and is firm enough to be topped; it does not need to be hard or fully set.
  27. Pour the mixture slowly in a circular motion so it does not press on one spot and sink the chocolate pudding.
  28. If the chocolate pudding has already hardened, prick its surface with a fork so the layers still stick together.
  29. Leave it until cool and firm, then keep it in the chiller for about four hours.
  30. After about four hours, turn the pudding cake out of the tin, tidy up the edges, then slice and serve.
