Ingredients

Steps

  1. Prepare 250 gr pumpkin, weighed after peeling, then cut the pumpkin into pieces.
  2. Steam the pumpkin for about 15 minutes until soft, poke it to check that it is done, then lift it out.
  3. While it is still hot, mash the pumpkin.
  4. Set out a bowl, add 250 gr medium-protein flour, 150 gr granulated sugar, and 1 tsp instant yeast, then stir until evenly combined.
  5. Add 50 ml cooking oil, 100 ml water, and 1 egg, then stir until evenly combined.
  6. Add 150 gr of the mashed pumpkin and 1/2 tsp salt, then keep stirring until evenly combined.
  7. If the color looks too pale, add food coloring. Here three drops of egg-yellow coloring are added, then stir until evenly combined; the batter should be fairly thick.
  8. Cover the batter with plastic wrap, a cloth, or a clean towel, then let it rest for 1 hour until it rises and turns bubbly.
  9. After one hour, uncover it and stir the batter until evenly combined and the bubbles disappear.
  10. Set out paper cups and steamed-cupcake moulds, then pour the batter into the paper cups until full.
  11. Preheat the steamer before you start pouring so the batter can go straight in without waiting.
  12. Steam for 15 minutes over the highest heat. If the steamer lid is flat, line it with a clean cloth or towel so condensation does not drip onto the batter.
  13. Do not open the steamer lid before 15 minutes are up. After 15 minutes, open the lid; the moho cakes that have burst open are done, so lift them out of the steamer.
  14. Release the cakes from the moulds and serve.
