Ingredients

Steps

  1. Melt 75 g margarine over a pot of boiling water then set it aside.
  2. Put 225 g of fermented cassava tape, with the fibrous core removed, into a chopper.
  3. Pour in 300 ml medium thick coconut milk then blitz until the tape is smooth.
  4. Add 3 eggs, 25 g milk powder, 185 g granulated sugar, 1/2 tsp vanilla powder, 1 1/2 tsp instant yeast, and 375 g wheat flour.
  5. Blitz again until the batter is smooth and evenly combined.
  6. Add 1 tsp salt and the melted margarine then blend again until evenly combined.
  7. Transfer the batter to a bowl.
  8. Add 100 g of half mature grated coconut then stir until evenly combined.
  9. Cover the batter with plastic wrap then rest it about one hour until it rises.
  10. Stir the batter to break the air bubbles inside.
  11. Heat the mould over the lowest heat then brush it thinly with margarine.
  12. Fill the mould only three quarters full because the cakes will rise.
  13. Cover the mould then cook over the lowest heat until the surface dries.
  14. Flip the cakes so they cook evenly then keep cooking until the underside is golden brown.
  15. Take the cakes out of the mould, grease it again, then cook the rest of the batter.
