Ingredients

Coating ingredients:

Steps

  1. Wash 1 kg of peeled cassava clean, drain it, then cut it up and remove the fibrous cores.
  2. Put the cassava into a blender.
  3. Add 30 ml instant coconut cream, 60 g melted margarine, 250 g granulated sugar, 1/2 tsp vanilla powder, and 1 tsp salt.
  4. Add the rest of the cassava, then blend until it is smooth and evenly combined.
  5. Divide the cassava mixture into three equal portions.
  6. Add food coloring to each portion as needed, then stir until evenly combined.
  7. Prepare 6 bananas and 6 banana leaves that have been softened over a low flame.
  8. Spread some mixture onto each banana leaf, dividing each colored portion into 6 equal parts.
  9. Place a banana in the middle of the mixture, trimming it first if it is too long.
  10. Wrap the mixture around the banana and seal it so the banana is fully enclosed.
  11. Press the parcel firm, roll the banana leaf up as you would for lontong, then pin both ends with a bamboo sliver or a staple.
  12. Repeat until everything is wrapped, then put the parcels into the steamer.
  13. Steam for about 30 minutes over already boiling water until the cakes are cooked through.
  14. Lift the cakes out of the steamer, then let them cool completely.
  15. Mix 200 g grated coconut, white part only, with 1/3 tsp salt, stir until even, then steam it for about 10 minutes so it does not spoil quickly.
  16. Once the cakes are cool, unwrap them from the banana leaves and slice them as you like.
  17. Roll the slices in the grated coconut and serve.
