Steps

  1. Grease a 20x20 cm pan thinly with cooking oil and line it with baking paper.
  2. Peel 1.3 kg cassava, remove the fibrous core, wash it clean, then grate it.
  3. Put the grated cassava in a bowl, add 3/4 tsp salt and 60 g tapioca starch, then stir until evenly combined.
  4. Pour in 350 ml medium-thick coconut milk and stir again until evenly combined.
  5. Divide the batter into three equal parts.
  6. For the first part, add 35 ml water and 75 g granulated sugar, then stir until evenly combined.
  7. For the second part, add 35 ml water, 75 g granulated sugar, and 1/2 tsp pandan paste, then stir until evenly combined.
  8. For the third part, add 35 ml water and 75 g palm sugar, then stir until evenly combined.
  9. Stir the white batter first, then pour it into the pan, level it with a spoon or spatula, and tap the pan a few times.
  10. Steam in a steamer with already boiling water for about 10 minutes over medium heat, lining a flat steamer lid with a clean cloth.
  11. Uncover the steamer, pour in the next layer, level it with a spoon or spatula, then continue steaming for 10 minutes.
  12. Pour in the last layer and continue steaming about 60 minutes over medium heat until the cake is cooked.
  13. Take the pan out of the steamer, let the cake cool until the surface is dry, then turn it out of the pan and slice.
