Ingredients

Steps

  1. Brush a 20 x 20 cm tin with cooking oil.
  2. Line the tin with baking paper then set it aside.
  3. Prepare the cassava and peel it; use 1 kg net weight after peeling.
  4. Once peeled, remove the fibrous core running through the cassava.
  5. Wash the cassava clean then grate all of it.
  6. Transfer the grated cassava into a bowl.
  7. Add 50 gr of tapioca flour and 1/2 tsp of salt then stir until evenly combined.
  8. Add 225 gr of granulated sugar then stir until evenly combined.
  9. Add 2 lightly beaten eggs then stir again until evenly combined.
  10. Add 30 gr of melted margarine and 370 ml of medium-thick coconut milk.
  11. Stir the batter again until evenly combined.
  12. Pour the batter into the tin then tap the tin a few times so the batter levels out.
  13. Preheat the oven for about 10 minutes, then put the tin of batter on the lowest rack.
  14. Bake at 200 degrees Celsius with top and bottom heat for about 60 to 75 minutes or until the surface is golden brown.
  15. After about 60 minutes of baking, when the surface is golden brown, take the tin out of the oven.
  16. Let the cake cool completely before turning it out of the tin.
  17. Once cool, turn the cake out of the tin and peel off the baking paper.
  18. Slice the cake and it is ready to serve.
