Ingredients

Steps

  1. Prepare 1 kg of grated cassava, peeled net weight, then drain it if it holds a lot of water and set aside.
  2. Put 5 medium eggs, 200 g granulated sugar, and 1 tsp emulsifier into a bowl.
  3. Beat at maximum speed for about 10 minutes until the batter is pale, risen, thick, and ribbon-forming.
  4. Add 1 tsp vanilla powder, then beat for about 1 more minute until evenly combined.
  5. Add the grated cassava gradually, a little at a time, while mixing on low speed so the cassava separates into the batter.
  6. Add 50 g wheat flour, then mix again on low speed until evenly combined.
  7. Pour in 100 ml thick coconut milk and 100 g melted margarine.
  8. Fold with a spatula from the bottom up until no liquid is left settled at the bottom of the batter.
  9. Divide the batter into 5 equal portions, add 5 drops of food coloring to each, then stir until evenly combined.
  10. Grease a 24 cm round pan thinly with margarine, then dust it lightly with wheat flour.
  11. Pour the batter into the pan, either stacking one color over another or alternating them as you like.
  12. Tap the pan a few times so the trapped air can escape.
  13. Steam over already boiling water for about 35 minutes on medium heat, with the steamer lid wrapped in a clean cloth.
  14. Turn off the heat, take the pan out of the steamer, then let it cool completely before turning the cake out.
  15. Run a knife around the edge of the pan, turn the cake out, then slice it with a sharp knife or a plastic knife.
