Ingredients

For coating:

Steps

  1. Put the low protein wheat flour into a wok, then dry toast it for about five minutes over medium low heat while stirring constantly so the bottom does not scorch.
  2. Turn off the heat, then let the flour cool completely.
  3. Grind the roasted peanuts in a chopper or crush them coarsely; they do not need to be completely fine.
  4. Sift the cooled flour, then weigh it and use only 375 grams.
  5. Sift the cornstarch and milk powder into the flour, then stir until evenly combined.
  6. Add the icing sugar and the ground peanuts, then stir until evenly combined.
  7. Pour in the cooled melted margarine a little at a time while stirring the dough until evenly combined.
  8. Knead the dough briefly by hand to make sure everything is thoroughly combined.
  9. Take a little dough, squeeze and pack it, then roll it into a smooth ball; if the dough will not hold together, add about one tablespoon of margarine.
  10. Use a measuring spoon so all the balls are the same size, then roll all of the dough.
  11. Arrange the balls on a tray, which may be greased with a thin layer of margarine or lined with baking paper.
  12. Bake in a preheated oven at 170 degrees Celsius with top and bottom heat for about 30 minutes until the cookies are done.
  13. Take the tray out of the oven, then bake the remaining dough the same way.
  14. While still hot, put the cookies straight into the icing sugar so the sugar sticks to them.
  15. Move the cookies into the doughnut sugar, then coat them twice so the sugar sticks evenly.
  16. Wait until the cookies are completely cold, then store them in an airtight jar or container so they stay crisp and keep well.
