Homemade Pineapple Jam

Open offline saves

Ingredients

Steps

  1. Peel 5 medium pineapples, remove the eyes and the cores, cut them into small pieces, then wash them so the net weight is about 3 kg.
  2. Grind the pineapple in a chopper or blender until smooth.
  3. Put the pureed pineapple into a non-stick pan along with 3 knotted pandan leaves and 3 cinnamon sticks.
  4. Cook over medium heat, stirring constantly, until it boils and bubbles up, then stir right down to the base of the pan.
  5. Cover the pan, then keep cooking over medium-low heat, stirring occasionally, until the liquid reduces.
  6. Turn the heat down to the lowest setting and keep cooking until the liquid starts to dry out.
  7. Once the liquid has reduced, add 300 g granulated sugar and stir until evenly combined.
  8. Keep cooking, stirring more often, until it dries out and becomes jam, then check the sweetness.
  9. Add 1/2 tsp salt so the flavour is more balanced and savoury.
  10. Keep cooking until the jam is properly dry; the whole process takes about 3.5 hours to become jam.
  11. Check that the jam is dry by turning it over; if it does not fall off it is done, then turn off the heat and let it cool.
  12. Once the jam is cool, oil your hands lightly, take one measuring spoonful of jam and roll it into a ball of about 5 g, or shape it into an oval as you like.
  13. Store the pineapple jam in an airtight container in the fridge, on a shelf rather than the freezer, so it keeps for up to 6 months.
