Pineapple Jam for Nastar

Ingredients

Steps

  1. Peel the pineapples, cut out the eyes, wash them clean, then cut them into small pieces so they are easier to grind.
  2. Grind the pineapple in a chopper or blender, or grate it, without adding any water.
  3. Put the ground pineapple into a pot along with the cinnamon sticks and pandan leaves.
  4. Cook over medium heat, stirring occasionally so the bottom does not scorch.
  5. Add the salt, stir until combined, then carry on cooking until it boils.
  6. Once it boils, cover the pot so it does not spit, still stirring occasionally.
  7. Once the jam starts to dry out, add the sugar; the sugar goes in only after the jam has dried so the colour stays bright.
  8. Carry on cooking, stirring occasionally, until it becomes a firm jam that does not drop off the spatula when turned over.
  9. Leave the jam to cool.
  10. Roll the jam into balls using a half teaspoon measure, about 4 to 5 grams each, with your hands rubbed with cooking oil so the jam does not stick.
  11. Store the jam in an airtight container on a normal fridge shelf rather than the freezer; it keeps for about six months.
