Long-Keeping Pineapple Jam

Open offline saves

Ingredients

Steps

  1. Peel 4 pineapples, remove the eyes and the core, rub them with salt and rinse clean, giving about 2800 g net weight.
  2. Grind the pineapple using a chopper, a blender, or a hand grater.
  3. Tip the ground pineapple into a wok.
  4. Add 3 cinnamon sticks, then cook over medium heat, stirring now and then so the bottom does not scorch.
  5. Once it boils and bubbles up, cover the wok and carry on cooking until the liquid dries off, stirring occasionally.
  6. When the liquid has started to reduce, add 150 g palm sugar and stir until it dissolves.
  7. Add 400 g granulated sugar, or as much as needed depending on how tart the pineapple is, then stir until dissolved.
  8. Taste and adjust, adding more granulated sugar if it is not sweet enough.
  9. Once the jam has dried out, turn off the heat and let it cool.
  10. Store the jam in an airtight container in the fridge so it keeps well and is easier to shape.
  11. Rub your hands with a little cooking oil, take about 4 g of jam, then roll it into a ball or an oval.
  12. Roll as many as you need for now, then keep the rest in an airtight container in the fridge.
