Pineapple Jam Cake, Soft Without Emulsifier

  1. Grate 2 medium pineapples using the finest holes of a grater, or simply blend them if you prefer something quicker.
  2. Pour the grated pineapple into a pan and add 200 g sugar, adjusting to taste and to how sweet the pineapple already is.
  3. Cook over medium heat while stirring constantly.
  4. Once the pineapple liquid has reduced by half, add 2 cloves and a little cinnamon.
  5. Keep stirring until all the pineapple liquid has cooked away, but do not let it dry out since this jam is for spreading, then let it cool.
  6. Melt 150 g butter over low heat while stirring, turn off the heat, then keep stirring until the butter is completely melted.
  7. Combine 100 g cake flour with 10 g cornstarch, mix them together, then sift.
  8. In a mixing bowl combine 3 whole eggs, 5 egg yolks and 150 g sugar.
  9. Beat at the highest speed until the batter is fluffy and thick.
  10. Lower to slow speed and add the flour mixture in stages while continuing to mix.
  11. Once the flour is fully incorporated switch off the mixer, then add 1 tsp vanilla extract, 2 tbsp condensed milk and the melted butter.
  12. Fold until evenly combined and make sure no melted butter is left sitting at the bottom.
  13. Pour the batter into a 24x24 cm square pan that is 4 cm deep, greased with butter and lined with baking paper.
  14. Bake at 170 degrees Celsius with top and bottom heat for about 20 minutes until done, preheating the oven 10 minutes beforehand.
  15. Turn the cake out of the pan and let it cool.
  16. Cut the cake into two equal halves.
  17. Spread the cooled pineapple jam evenly over the surface of one half.
  18. Stack the other half on top and press down so the layers bond well.
