Ingredients

Pandan Mixture:

Steps

  1. Turn on medium heat and bring 700 ml of water to a boil in a pot.
  2. Once the water boils, add 100 gr sago pearls.
  3. Cover the pot, then boil for about 10 minutes.
  4. After about 10 minutes of boiling, turn off the heat.
  5. Cover the pot again and let it stand for about 10 minutes, or until the sago pearls are cooked and completely translucent.
  6. Strain the sago pearls, then rinse them with room-temperature water to stop the cooking.
  7. Put 150 gr tapioca starch, 100 gr granulated sugar, 1/4 tsp salt, 600 ml water, and 150 ml pandan juice made from 10 pandan leaves blended with a little water into a wok.
  8. Stir until evenly combined, until the mixture is smooth, silky, and free of lumps.
  9. If the color looks too pale, add 1/2 tsp pandan paste or green food coloring, then stir until evenly combined.
  10. Cook over medium heat until it boils, thickens, and the liquid cooks off, stirring constantly so the bottom does not scorch.
  11. Once the mixture boils, thickens, bubbles up, and turns glossy, it is done.
  12. Turn off the heat, then let the mixture cool.
  13. Once cooled, transfer the mixture into a piping bag.
  14. Set out a container and add 250 gr sweetened condensed milk to taste, 250 gr nata de coco drained of its syrup, and the drained sago pearls.
  15. Add 1 can of evaporated milk and stir until evenly combined. If you have no evaporated milk, use coconut milk cooked to a boil with granulated sugar and a little salt.
  16. Pipe the pandan mixture into the container, spacing it out so the strands do not stick together.
  17. Stir first so the pandan strands do not clump, then pipe in the rest of the mixture.
  18. Chill in the fridge for at least about two hours before serving. It can also be served with ice cubes if you like.
