Buko Pandan Pudding

  1. Boil water, add 30 g pearl sago (white ones) and a little green coloring, cook for 10 minutes with the pot covered.
  2. After 10 minutes, stir briefly, cover again, turn off the heat, and let it sit for 30 minutes without opening.
  3. After 30 minutes, stir gently, turn the heat back on, boil for 7 minutes with the pot covered.
  4. After 7 minutes, check the pearls, if still white in the center, turn off the heat and cover again until they're all translucent.
  5. Once translucent, remove, drain, then soak in plain water and drain again so they don't stick together.
  6. Spread the pearl sago evenly into a 16x16 cm pan.
  7. Mix 2 sachets plain agar-agar (reserve 2 tsp for the green layer), 90 g sugar, 1 can evaporated milk, 2 sachets condensed milk, 500 ml water, and a little pandan paste, mix well, cook until boiling.
  8. Once boiling, turn off the heat, let the steam die down, pour some into the pan to bind the pearl sago.
  9. Add 150 g young coconut into the pan.
  10. Slowly pour in the rest of the pudding until finished, wait until it's half set.
  11. Make the green layer: mix 2 tsp agar-agar, 60 g sugar, 400 ml water, and pandan paste, cook until boiling.
  12. Once boiling, turn off the heat, let the steam die down, slowly pour over the half-set pudding layer.
  13. Wait until set, refrigerate, then slowly remove from the pan and serve.
