  2. Once boiling, turn off the heat, stir briefly, then cover the pot and leave it for about 10 minutes with the heat off.
  3. Uncover the pot, then boil again for about 10 minutes over medium heat with the lid on.
  4. Turn off the heat, cover the pot again, then leave it for 10 minutes until the pearls are evenly translucent and soft.
  5. Strain the pearl sago, rinse it with water, then set it aside.
  6. Prepare a pot, add one packet of green agar-agar powder and 2 tbsp granulated sugar, then stir until evenly combined.
  7. Add the water from one young coconut, about 700 ml, then stir until evenly combined.
  8. Cook until it boils, then turn off the heat.
  9. Pour the agar-agar into a tin and leave it until set and firm.
  10. Cut the set agar-agar into cubes.
  11. Prepare a bowl and add the agar-agar cubes and the reserved pearl sago.
  12. Add nata de coco to taste with its liquid drained off, then add the young coconut flesh cut into long strips.
  13. Add one can of evaporated milk and half a can of sweetened condensed milk, then stir until evenly combined.
  14. Add pandan paste a little at a time, stirring until the colour is as you like it.
  15. Chill the buko pandan in the fridge for about an hour, then serve it in glasses or bowls.
  16. Sprinkle grated cheese over the top.
