Open offline saves

Ingredients

for the sugar coating:

Steps

  1. Put 450 gr glutinous rice flour, 50 gr rice flour, 50 gr tapioca flour, and 2 tsp salt into a bowl, then stir until evenly combined.
  2. Add 400 gr coarsely grated half-ripe coconut and 2 tbsp margarine.
  3. Pour in 320 ml coconut milk little by little while stirring, and stop adding coconut milk once the dough can be shaped.
  4. Knead the dough by hand until it can be shaped.
  5. Take a little dough, roll it, then shape it into a flat oval, and repeat until the dough is used up.
  6. Warm the oil in a wok over medium-low heat, keeping it from getting hot so the cakes do not burst while frying.
  7. Add enough of the shaped dough pieces into the warm oil.
  8. Fry until golden yellow, and flip the cakes once they start to float so they cook evenly.
  9. Once golden yellow, lift the cakes out and drain off the oil, then fry the remaining dough.
  10. For the sugar coating, put 150 gr granulated sugar, 150 gr palm sugar chopped small, and 200 ml water into a wok.
  11. Cook over medium heat, stirring occasionally, until the sugar dissolves, boils, thickens, and foams.
  12. Add the cakes fried earlier, then stir until the sugar thickens and soaks in completely.
  13. Turn off the stove once the sugar starts to thicken, then keep stirring until the sugar soaks in, turns glossy, and forms caramel.
  14. Stop stirring so the sugar does not harden, let it rest until the sugar dries, then serve.
