Ingredients

Sugar Coating Ingredients:

Steps

  1. Put 200 g of black glutinous rice flour, 200 g of white glutinous rice flour, and 1 and a half teaspoons of salt into a bowl, then stir until evenly combined.
  2. Add 250 g of the white part of half-mature grated coconut and 225 ml of medium-thick coconut milk a little at a time, then stir until evenly combined and the dough comes together.
  3. Once the dough starts coming together, knead it by hand until it no longer sticks to your hands and can be shaped.
  4. Take about 45 g of dough, press it firm, roll it, then flatten it to whatever shape and size you like.
  5. Repeat until all the dough is shaped.
  6. Heat oil over low heat, then lower a batch of the shaped dough into the oil.
  7. Fry the gemblong over low heat, turning them once the outside starts to form a crust so they cook evenly, until both sides are golden.
  8. Lift the gemblong out and drain them, then carry on frying the rest.
  9. Put 70 ml of water and 150 g of granulated sugar into a wok.
  10. Cook over medium heat, stirring constantly, until the sugar dissolves, boils into a foam, and thickens.
  11. Add the fried gemblong, then keep cooking and stirring until the sugar soaks in and starts to thread.
  12. Turn off the heat, then keep stirring and turning until the sugar hardens and crystallises.
