Ingredients

Sugar Glaze Ingredients:

Steps

  1. In a bowl put 250 g glutinous rice flour, 75 g rice flour, 25 g tapioca starch, and 1 1/2 tsp salt, then stir until evenly combined.
  2. Add 250 g grated coconut, using only the white part, 20 g margarine, and part of the 225 ml medium thickness coconut milk.
  3. Stir the dough until evenly combined and it comes together.
  4. Pour in the remaining coconut milk gradually until the dough feels right.
  5. Once the dough starts to come together, continue kneading it by hand.
  6. Once the dough comes together and no longer sticks to your hands, stop adding coconut milk.
  7. Take about 45 g of dough, then press, roll, and flatten it.
  8. Heat the oil over low heat, then add a batch of the shaped dough to the oil.
  9. Fry over low heat until both sides are golden so the inside cooks through evenly and does not scorch.
  10. Once the gemblong starts to form a crust, turn it over so it cooks evenly.
  11. Once both sides are golden, lift out and drain the gemblong, then continue frying the rest of the dough.
  12. In a wok put 100 ml water, 75 g granulated sugar, and 75 g palm sugar.
  13. Cook over medium heat, stirring constantly, until the sugar dissolves and boils.
  14. Once the sugar has dissolved, boiled, foamed, and thickened, add the fried gemblong.
  15. Keep cooking while stirring constantly until the syrup soaks in and coats the gemblong evenly.
  16. Once the syrup coats them all and is evenly distributed, turn off the stove.
  17. Let them stand until cool, then serve.
