Ingredients

Steps

  1. Bring a little water to the boil in a pot over medium heat.
  2. Combine 200 g of margarine with 50 g of dark cooking chocolate chopped small in a bowl.
  3. Once the water boils turn off the heat, set the bowl of chocolate and margarine on top, melt it until combined, then set it aside.
  4. Put 5 eggs, two egg yolks, 185 g of granulated sugar, and 1 teaspoon of emulsifier into a bowl.
  5. Beat on maximum speed for about 8 to 10 minutes until the batter is risen, thick, and holds a trail.
  6. Sift in 300 g of black glutinous rice flour, 15 g of cocoa powder, a quarter teaspoon of salt, half a teaspoon of baking powder, and a quarter teaspoon of vanilla powder.
  7. Stir it in by hand first so the flour does not fly about, then mix on the lowest speed for about 30 seconds, just enough to combine.
  8. Go over the batter with a spatula to make sure it is evenly combined.
  9. Heat water in the steamer pot over medium heat.
  10. Add 40 g of sweetened condensed milk to the melted chocolate once it is only warm, then stir until evenly combined.
  11. Pour the chocolate mixture into the batter, then fold gently from the bottom up until evenly combined with no liquid settled at the bottom.
  12. Pour the batter into a 24 cm tin, then level it to break the air bubbles in the batter.
  13. Put the tin of batter into the steamer once the water is boiling, then steam over medium heat for about 35 minutes until the brownies are done.
  14. Do a skewer test, then lift the tin out of the steamer.
  15. While it is still hot, turn the brownies out of the tin, then slice and serve.
