Crispy Shrimp Bread Balls

Open offline saves

Ingredients

Steps

  1. Prepare 250 gr shrimp, net weight after peeling.
  2. Slit the back of each shrimp, then pull out and discard the vein. You can also pierce the tail end with a bamboo stick and pull the vein out.
  3. Rinse the shrimp clean and squeeze lime juice over them so they do not smell fishy.
  4. Cut and chop the shrimp so some texture remains.
  5. Set out a bowl and add the chopped shrimp, 1 tbsp cornstarch, 3 tbsp finely diced onion, 1 tsp grated ginger, 1/2 tsp lemon or lime juice, 1 tsp oyster sauce, 1/4 tsp ground black pepper, 1/2 tsp salt, and 1 tsp chopped coriander leaves, which can be swapped for celery leaves.
  6. Stir until evenly combined.
  7. Once evenly combined, let it rest for about 5 minutes so the seasoning soaks in.
  8. Prepare 8 slices of white bread, trim off the crusts, then cut the bread into small cubes.
  9. Grease your hands with a little cooking oil, then take about 1 tbsp of the shrimp mixture.
  10. Roll and press the shrimp mixture into a firm ball.
  11. Drop the shrimp ball into the cubed bread, then roll it until the whole ball is covered in bread.
  12. Squeeze and press gently until the bread sticks. Repeat until all the mixture has been rolled.
  13. Turn on medium heat and heat oil in a pot.
  14. Once the oil is hot, lower in a batch of the shrimp balls and fry over medium to low heat until golden brown, turning them so they cook evenly.
  15. Once golden brown, lift the shrimp balls out of the oil, drain off the excess, then serve them warm.
  16. Continue frying the rest. The unfried balls can be kept in the freezer for up to 1 month and fried whenever you like.
