Ingredients

Coating batter:

Steps

  1. Wash 500 g mung beans, soak them for at least 3 hours or overnight, then drain.
  2. Bring about 2 litres of water to a boil in a pot, then add the soaked mung beans and 2 pandan leaves.
  3. Cover the pot and boil for about 10 minutes over medium heat, then uncover, stir the beans, and cover again.
  4. Turn off the stove and leave for about 30 minutes with the pot still covered.
  5. After 30 minutes, keep cooking for about 7 minutes more or until the water starts to reduce, over medium heat, stirring occasionally.
  6. Add 200 ml medium thick coconut milk, 250 g granulated sugar, 1 tsp salt, 1/2 tsp vanilla powder, and 200 g grated coconut using only the white part.
  7. Keep cooking, stirring constantly, until the liquid reduces, but do not let it get too dry because the mixture firms up as it cools.
  8. For the batter, put 250 g wheat flour, 100 g rice flour, and 1/2 tsp salt into a bowl, then stir until evenly combined.
  9. Add 500 ml water, then stir until the batter is smooth, slick, and free of lumps.
  10. Once the mung bean mixture has cooled, weigh out portions of about 50 g each, press them firm, roll them into balls, then flatten them.
  11. Dip each patty into the flour batter.
  12. Heat oil over medium heat, add a few patties at a time, then fry until both sides turn golden; flip once the batter coating starts to dry.
  13. Once both sides are golden and cooked through, lift them out and drain, then fry the rest.
