Ingredients

Steps

  1. Bring water to a boil in a pan, set a bowl holding 200 g dark cooking chocolate on top, then add 120 ml cooking oil.
  2. Melt over the double boiler until the chocolate is melted and evenly combined, then set it aside.
  3. In a bowl, add 120 g granulated sugar, 50 g brown sugar, and 3 eggs.
  4. Mix on maximum speed for about 5 minutes until the batter is fluffy and pale, then turn off the mixer.
  5. Add the melted chocolate.
  6. Add 1/4 tsp salt, then stir the batter until evenly combined.
  7. Sift 75 g medium protein wheat flour, 40 g cocoa powder, and 1 1/2 tsp baking powder to make sure there are no lumps.
  8. Add the sifted dry ingredients to the batter, then keep stirring until evenly combined.
  9. Add 100 g chocolate chips or chocolate coins, then stir briefly just until evenly mixed.
  10. Spoon the batter into a muffin mould lined with muffin papers, filling only a third of each because the batter rises as it bakes.
  11. Preheat the oven for about 10 minutes, put the tray in, then bake at 180 degrees Celsius with top and bottom heat for about 40 minutes or until done.
  12. Do a skewer test; if no batter sticks to it, take the tray out of the oven.
