Steps

  1. In a bowl, add 500 g medium protein wheat flour, 1 1/2 tsp salt, 1 egg, 200 ml water, and 40 g cooking oil, then stir until evenly combined.
  2. Once the dough starts to come together, knead it by hand for about 5 minutes until smooth and no longer sticky, then round it.
  3. Cover the dough with plastic wrap, then rest it for about 60 minutes in the refrigerator.
  4. While waiting, grind 600 g chicken meat.
  5. Heat a little oil in a pan, add 8 cloves of ground garlic and 3 finely sliced onions, then sauté over medium heat until fragrant, and turn off the stove.
  6. In a bowl, add the ground chicken, 150 g grated potato, the sautéed onion, 1 1/2 tsp chilli powder, 2 tsp ground cumin, 1 tsp ground pepper, and 2 tsp salt, then stir until evenly combined.
  7. After the 60 minute rest, divide the dough into two equal parts, grease the work surface with cooking oil, then roll one part out thin.
  8. Brush the surface of the dough with 80 g melted margarine, then leave it for about 10 minutes until the margarine dries.
  9. Roll out the other piece, lay it on top of the first, stretch it to match the sheet underneath, then brush its surface with margarine as well.
  10. Once the margarine has dried, roll the dough up into a log.
  11. Cut the log into 16 pieces, dust them with wheat flour so they do not stick, then roll each one out.
  12. Place about 1 tbsp of filling in the centre, fold the dough into a triangle, then seal it tightly so it does not open while baking.
  13. Brush the surface with egg yolk; these can also be frozen for up to 1 month in an airtight container.
  14. Preheat the oven for about 10 minutes, then bake at 180 degrees Celsius with top and bottom heat for about 40 minutes or until the surface is golden, then take the tray out of the oven and serve warm.
