  1. Peel about 1.5 kg of young papaya, clean it, then grate it.
  2. Heat a wok with frying oil and fry 8 chopped cloves of garlic until fragrant.
  3. Add 35 g of chopped dried shrimp and fry until fragrant.
  4. Add the grated papaya.
  5. Season with 2 tbsp oyster sauce, 2 tbsp sesame oil, one and a half teaspoons of pepper, 1 tsp salt, half a teaspoon of mushroom bouillon and 2 tsp of sugar.
  6. Stir-fry until the papaya is cooked.
  7. For the skin, mix 300 g of rice flour with 150 g of tapioca flour.
  8. Add 100 ml of coconut cream with 1.1 litres of water, or use 1.2 litres of thin coconut milk, then stir until combined.
  9. Add 1 tsp of salt and stir until the salt dissolves, then set it aside.
  10. Preheat the steamer and brush a square tray with a thin layer of oil.
  11. Pour in about two and a half ladles of batter so it covers the whole surface of the tray.
  12. Steam over medium or low heat until the skin is cooked.
  13. Lift it out and set it aside until it reaches room temperature.
  14. Divide the skin into four by cutting it diagonally.
  15. Turn each piece over so the inner side becomes the top.
  16. Put in enough filling, then fold it into a triangle.
