  1. Finely chop 3 cloves of garlic.
  2. Cut half an onion into small pieces.
  3. Cut the white part of 2 stalks of spring onion into small pieces.
  4. Cut half a red bell pepper and half a green bell pepper into small pieces.
  5. Slice 250 g of beef sirloin thinly, and if the beef is a bit tough, pound it first with a meat tenderiser or the back of a knife.
  6. Move the beef to a bowl, then add 1 tbsp cornstarch and 2 tbsp vegetable oil.
  7. Add 1 tbsp thick salty soy sauce, 1/4 tsp ground white pepper, and 1 egg.
  8. Mix well until the beef absorbs the egg.
  9. Put it in the fridge and marinate for about 30 minutes.
  10. For the sauce, combine 1 tbsp Worcestershire sauce, 1 tbsp sweet soy sauce, 2 tbsp thick salty soy sauce, 2 tbsp oyster sauce, and 1 tbsp sesame oil, then stir until even.
  11. In a separate bowl, dissolve 1 tsp cornstarch in 75 ml of water.
  12. Heat a wok, then add enough vegetable oil.
  13. Once the oil is really hot, add the beef and cook it only briefly, about 5 seconds, so it does not turn tough.
  14. Lift out the beef, drain off the oil, then set it aside.
  15. In the same wok, stir fry the bell peppers for about 20 seconds, then lift them out and set aside.
  16. Reheat the wok, add 2 tbsp vegetable oil, then saute the garlic until fragrant.
  17. Add 1 tbsp ground black pepper that has been dry roasted.
  18. Pour in the sauce and stir until even.
  19. Add the cornstarch slurry and stir until the sauce thickens.
  20. Add the onion and spring onion and stir fry briefly.
  21. Return the beef and the stir fried bell peppers to the wok.
  22. Stir for about a minute until the sauce is fully absorbed by the beef.
  23. Turn off the heat and serve.
