  1. Prepare 1 kg of skinless pork belly and 1 kg of pork shoulder so the texture comes out right.

  8. Pour in 30 ml of light soy sauce.
  9. Pour in 50 ml of rose cooking wine or ordinary cooking wine with at least 25 percent alcohol, because besides flavour it also kills bacteria.
  10. Add 1 tsp five spice powder.
  11. Mix all the ingredients until evenly combined, and the salt, sugar, and alcohol act as natural preservatives so no artificial preservative is needed.
  12. Let the mixture rest for two hours at room temperature.
  13. Prepare edible collagen sausage casing or pork intestine, along with string for tying.
  14. Load the seasoned meat into the barrel of a sausage stuffer.
  15. Fit the casing over the nozzle, then press the stuffer so the meat fills the casing.
  16. Prick the sausages with a toothpick so trapped air escapes, leaving no space for bacteria to grow and making the sausages dense.
  17. Hang the sausages at room temperature in a fairly warm spot for seven days straight.
  18. After seven days the sausages will look dry with a dark red colour and clearly visible fat.
