  1. Cut 500 g of pork belly, then rub it with the juice of 2 calamansi or 1 tbsp lime juice.
  2. Add 1/4 tsp salt, mix well, then marinate for about 30 minutes.
  3. For the spice paste, prepare 15 cloves of shallot, 5 cloves of garlic, 7 cm turmeric, 2 cm ginger, and 6 candlenuts.
  4. Add 8 bird's eye chillies and 8 red curly chillies, and adjust the amount of chilli to how spicy you like it.
  5. Pour in 3 tbsp vegetable oil so the spices blend more easily.
  6. Blend everything into a paste, it does not have to be completely smooth.
  7. Heat a wok, add the spice paste, then saute until the paste is fragrant and cooked.
  8. Add 2 stalks of bruised lemongrass and 6 kaffir lime leaves.
  9. Add 2 pandan leaves that have been cut into small pieces.
  10. Add the pork belly and stir fry briefly until the meat changes colour.
  11. Season with 1 tsp mushroom stock powder, which is optional, and 1/2 tsp ground white pepper.
  12. Add 2 tsp sugar and 2/3 tsp salt, then stir until even.
  13. Pour in 500 ml of water.
  14. Cover the wok and cook for about 30 minutes until the meat is tender.
  15. Add 8 whole bird's eye chillies if you want it spicier.
  16. Add a full handful of lemon basil leaves for extra aroma and stir briefly.
  17. Turn off the heat and serve with white rice.
