  1. Prepare 500 g of pork belly.
  2. Cut the pork belly into smaller pieces.
  3. Put the pork belly into a pot of water, then bring it to a boil uncovered.
  4. Skim off the foam floating on the surface with a spoon or a strainer.
  5. Let it keep boiling for about 5 more minutes.
  6. Lift the pork belly out of the pot.
  7. Wash the pork belly in clean water to rinse off any residue clinging to it.
  8. Pat the pork belly dry, then set it aside.
  9. Heat a wok, then add the blanched pork belly to render out its fat.
  10. Add about 1 tsp of oil to coat the base of the wok so nothing sticks.
  11. Lift the pork belly out of the wok and set it aside.
  12. Leave only about 2 tbsp of the rendered fat in the wok, and keep the rest for stir frying vegetables.
  13. Add 20 g of crushed rock sugar, then cook over low heat until it turns golden.
  14. Add the pork belly into the wok.
  15. Fry the pork belly together with the melted sugar until you can smell the caramelised sugar.
  16. Add 2 tbsp Chinese cooking wine.
  17. Add 1 1/2 litres of water.
  18. Add 2 bay leaves.
  19. Add 2 star anise.
  20. Add 4 slices of ginger.
  21. Add 1 1/2 tbsp light soy sauce.
  22. Add 1/2 tbsp thick salty soy sauce, which can be swapped for regular light soy sauce if you do not have it.
  23. Add 1/2 tsp mushroom or chicken stock powder and 1/2 tsp ground white pepper.
  24. Add the white part of 2 stalks of spring onion, cut into pieces.
  25. Cover the pot, then cook over low heat for one and a half hours.
  26. After that, keep cooking until the liquid evaporates and turns into a thick sauce.
  27. Turn off the heat and serve with white rice and stir fried vegetables on the side.
