  1. Cut 600 g of pork belly in half, then put it into a pot of boiling water.
  2. Add 4 slices of ginger, cover the pot, and cook over low heat for about 20 minutes.
  3. Turn off the heat and lift the meat out of the pot.
  4. Trim the edges of the meat, then cut each piece in half so you get four pieces.
  5. Heat a wok with 1 tbsp of vegetable oil, then saute 30 g of sliced ginger together with the white part of 1 bunch of small spring onion.
  6. Add 50 g of rock sugar and melt it over very low heat.
  7. Add the parboiled pork belly and cook for about 1 minute, being careful as the fat spits.
  8. Add 3 tbsp light soy sauce, 2 tbsp dark soy sauce, 50 ml cooking rice wine, and 300 ml water.
  9. Add 2 tsp oyster sauce, 1/2 tsp white pepper, and 1 tsp mushroom bouillon.
  10. Add 1 cinnamon stick and 1 star anise, then cook over low heat for 20 minutes.
  11. Lay the green parts of the spring onion on the bottom of a heatproof pot or claypot, then add the sauteed spring onion and ginger.
  12. Turn off the heat after 20 minutes, then move the pork belly into the claypot with the skin side facing down.
  13. Pour the sauce over the pork belly.
  14. Steam for 3 hours over low heat, checking the water so it does not dry out and burn.
  15. After the first 2 hours, flip the pork belly so the skin faces up, then keep steaming for the remaining time.
  16. Turn off the heat and serve.
