  1. Cut the lower part of 1.5 kg of pig trotters into small pieces and leave the knuckle whole.
  2. Cut 2 marrow bones in half.
  3. Put all the bones into a pot, fill it with water and bring it to a boil.
  4. Once boiling, simmer over low heat for about 15 minutes.
  5. Turn off the heat, lift out the bones and meat, then throw away the water.
  6. Wash the pot and scrub the bones clean so the broth will be clear.
  7. Return the bones to the pot and add plenty of fresh water.
  8. Add 1 onion cut in half, 10 cloves of garlic and 3 cm of ginger.
  9. Season with salt and white pepper, then add 2 tbsp of sesame oil and 3 tbsp of cooking wine.
  10. Cover and simmer over low heat for about 1 hour.
  11. Take out the pork knuckle, cover the pot again and simmer 2 to 3 hours more, checking the water level.
  12. Cool the knuckle in iced water, then separate the meat from the bone.
  13. Return the bones to the pot to enrich the broth.
  14. Pack the picked meat into a box and chill it so it firms up and slices easily.
  15. After 3 to 4 hours turn off the heat, and strain the broth if you like.
  16. Thinly slice the chilled meat.
  17. Ladle the hot broth into a bowl and add cooked white rice.
  18. Lay the sliced meat on top and garnish with sliced scallion.
  19. Serve with kimchi and a little kimchi juice, adjusting the taste with white pepper, salt or gochujang.
