  1. Smash and finely chop 3 cloves of garlic.
  2. Smash 350 g of cleaned peeled shrimp with the back of a knife, then chop it, and do not blend it so the texture stays right.
  3. Add the chopped garlic, 2 tbsp cornstarch, 1.5 tbsp sesame oil, 1/2 tsp salt, 1/2 tsp sugar, 1 tsp white pepper, and 1 tbsp oyster sauce.
  4. Add 1 egg white and keep the yolk for making the wrapper.
  5. Mix everything by hand, then gently slap the mixture so it becomes dense and springy, and set it aside.
  6. For the wrapper, mix 1 tbsp of tapioca starch with 3 tbsp of water until there are no lumps.
  7. Add the reserved egg yolk and 2 whole eggs, then beat until well combined.
  8. Add a little salt, then stir again until evenly mixed.
  9. Heat a non-stick pan greased with vegetable oil over medium heat, pour in the wrapper batter, lower the heat, then swirl it around evenly.
  10. Cook over low heat until the edges lift off by themselves, and repeat until you have 3 wrapper sheets.
  11. Mix 1 tbsp of wheat flour with 2 tbsp of water to use as glue for the wrappers.
  12. Divide the filling into three portions, then place one portion on each wrapper and shape it neatly in the centre.
  13. Brush the whole edge of the wrapper with the flour and water mixture, then wrap and roll it into a long roll slowly so the wrapper does not tear.
  14. Fry the rolls over medium heat until only half cooked, then lift them out carefully so they do not break.
  15. Slice the rolls, then fry them again over medium heat until fully cooked.
  16. For the dipping sauce, mix 4 tbsp mayonnaise, 2 tsp condensed milk, 1/2 tsp lime juice, and 1 tbsp tomato sauce until smooth.
  17. Put the sauce into a piping bag, snip off the tip, then drizzle it over the rolls and serve.
