Fish and Chips with Tartar Sauce

  1. Cut 1 cucumber into small dice.
  2. Remove the seeds first so the tartar sauce does not turn watery.
  3. Squeeze lemon juice over the diced cucumber.
  4. Chop 1/4 of an onion to the same size as the cucumber.
  5. Mash 1 boiled egg until it breaks down.
  6. Add the mashed egg to 100 g of mayonnaise.
  7. Add the chopped onion.
  8. Add the drained cucumber.
  9. Add more lemon juice, to whatever level of sharpness you like.
  10. Season with salt, pepper, and parsley, then stir and chill it.
  11. For the batter, put 300 g of all-purpose flour in a bowl.
  12. Add 2 tsp of baking powder.
  13. Add 1 tsp of baking soda and 1/2 tsp of salt.
  14. Pour in 350 to 400 ml of cold soda water a little at a time while whisking.
  15. Whisk until the batter is thick but still pourable.
  16. Rest the batter in the fridge so it stays cold for frying.
  17. Heat oil for deep frying.
  18. Fry the frozen chips until golden brown.
  19. Lift the chips out and drain them.
  20. Season the chips with salt while they are still hot.
  21. Cut the dory fillets in half.
  22. Combine 150 g of all-purpose flour with 1/2 tsp of salt for the dredging flour.
  23. Add 1/2 tsp of paprika powder and 1/2 tsp of garlic powder and mix.
  24. Dredge the fish in the seasoned flour and pat off the excess so it stays thin.
  25. Dip the fish into the batter and lower it slowly into the hot oil.
  26. Fry over fairly high heat until golden brown so the fish does not overcook.
  27. Lift out the golden brown fish and drain it.
  28. Serve the fish and chips with the tartar sauce and lemon wedges.
