  1. Put 55 g of all-purpose flour in a bowl for the crumble.
  2. Add 30 g of icing sugar.
  3. Add a pinch of salt.
  4. Stir the dry ingredients together with a fork.
  5. Add 35 g of cold unsalted butter.
  6. Add 1/2 tsp of vanilla paste.
  7. Work it with a fork until the mixture looks sandy.
  8. Chill the crumble until you need it.
  9. Preheat the oven to 180C.
  10. Crack 2 eggs into a bowl.
  11. Add 1/2 tsp of vanilla paste and a pinch of salt.
  12. Add 145 g of sugar.
  13. Beat for about 3 minutes until pale yellow and slightly risen.
  14. Combine 215 g of plain yoghurt with 90 g of melted unsalted butter.
  15. Add 30 g of vegetable oil.
  16. Stir until the wet ingredients are evenly combined.
  17. Pour the wet mixture into the egg mixture.
  18. Sift 275 g of cake flour into the batter.
  19. Add 25 g of milk powder.
  20. Add 1 tsp of baking powder and 1/2 tsp of baking soda.
  21. Fold gently just until combined; overmixing will make the muffins tough.
  22. Swap the mixer for a spatula.
  23. Add 100 g of blueberries to the batter.
  24. Fold until the blueberries are evenly spread, keeping some back for the topping.
  25. Scoop the batter into paper-lined muffin cups, about 75 g each.
  26. Scatter the chilled crumble and the reserved blueberries on top.
  27. Bake in the preheated oven until the crumble turns golden brown.
