No-Bake Blueberry Cheese Mousse Cups

  1. Blitz the oreo biscuits in a food processor until they are as fine as powder.
  2. Mix the biscuit crumbs with the melted unsalted butter until the texture is like wet sand.
  3. Spoon about one and a half to two tablespoons of the base into each glass and press it down firmly.
  4. Chill the glasses with the base in the fridge until you need them.
  5. Snip the gelatin sheet and soak it in cold water until it blooms.
  6. Cook the frozen blueberries with a little lemon juice over low heat for about 5 minutes until the liquid reduces and it looks like jam.
  7. Crush the blueberry compote roughly with a spatula, then take it off the heat.
  8. Melt the white chocolate in the microwave, checking constantly so it does not burn, then set it aside while still lukewarm.
  9. Beat the room-temperature cream cheese with the sifted powdered sugar and vanilla until soft and free of lumps.
  10. Stir the blueberry compote into the cream cheese mixture until evenly combined.
  11. Squeeze out the gelatin, melt it in the microwave until liquid, then add it along with the melted white chocolate and stir quickly until smooth.
  12. Whip the cold liquid whipping cream just until thickened, not stiff.
  13. Add the whipped cream to the cheese mixture and fold it in until the mousse is even.
  14. Transfer the mousse to a piping bag, pipe it over the base in each glass until full, then tap the glasses so it settles level.
  15. Chill until the mousse is set, then decorate with blueberries and mint leaves before serving.
