No-Bake Batik Cake with Cream Cheese and Ganache

  1. Break the Regal biscuits into large pieces, about three or four per biscuit, and put them in a large bowl. Do not break them too small so the batik pattern stays pretty.
  2. Prepare a 22 x 10 cm pan lined with baking paper. If the pan is not tall enough, extend the sides with mica plastic taped on with double sided tape.
  3. Put the butter, liquid milk, sweetened condensed milk, sifted cocoa powder and sifted Milo powder, and the salt into a saucepan.
  4. Cook over low heat while stirring constantly until everything melts and comes to a boil, then turn off the heat.
  5. Let the chocolate mixture stand until the steam disappears but it is still hot.
  6. Pour the hot chocolate mixture over the broken biscuits and fold slowly until every piece is coated in chocolate.
  7. Tip half of the mixture into the pan, level it and press it down firmly, then add the rest and level it again.
  8. Press and smooth the surface with a scraper or a flat tool until the layer is completely compact and even.
  9. Put the pan in the freezer for about 30 minutes.
  10. Meanwhile, soften the cream cheese with a spatula, then add the icing sugar and vanilla. Stir until smooth with no lumps, without aerating it.
  11. Pour in the cold liquid whipping cream straight from the fridge and stir until the mixture thickens like a mousse.
  12. Transfer the cheese mixture to a piping bag, pipe it evenly over the chilled biscuit layer, then smooth the top with a spatula.
  13. Return the pan to the freezer until the cheese layer is firm, about one to two hours.
  14. Melt the dark chocolate together with the whipping cream over a bain marie until smooth.
  15. Set the ganache aside until it is just lukewarm so it still spreads but will not melt the cheese layer.
  16. Pour the ganache over the frozen cake, tilt the pan so it spreads to every side, then briefly torch any bubbles that appear.
  17. Freeze again until the ganache sets, then lift the cake out of the pan and slice it with a knife warmed over a flame.
  18. For the best result, rest the cake overnight in the fridge before slicing so the biscuits absorb moisture from the chocolate and soften.
