  1. Crush 90 g of Regal biscuits to a sandy texture and melt 40 g of butter in the microwave.
  2. Pour the cooled melted butter over the biscuit crumbs.
  3. Stir until the mixture looks like wet sand.
  4. Tip the biscuit mixture into a 16 cm ring lined with plastic.
  5. Spread it out and press the base down.
  6. Compact it further with a bowl or glass until really firm.
  7. Chill in the fridge until the base hardens.
  8. Cut 1 1/2 sheets of gelatine and soak them in cold water until bloomed.
  9. Take 2 to 3 tbsp of the warmed whipping cream.
  10. Stir the warm cream into 6 g of green tea powder to make a lump-free paste.
  11. Heat water for a bain-marie and put 150 g of white chocolate in a heatproof bowl.
  12. Pour the remaining warm cream over the white chocolate.
  13. Melt over the lowest heat, stirring until the chocolate is fully melted.
  14. Squeeze the bloomed gelatine, add it in, and stir until dissolved.
  15. Take the chocolate mixture off the heat and set it aside.
  16. Soften 300 g of room temperature cream cheese with a spatula.
  17. Add 30 g of icing sugar, 1/2 tsp of vanilla, and 2 pinches of salt.
  18. Whisk until creamy with no lumps of cheese left.
  19. Pour the still-warm white chocolate mixture into the cream cheese and stir until combined.
  20. Whip 180 g of cold whipping cream until only just thickened, not stiff.
  21. Fold half of the whipped cream into the cheese mixture to match the textures.
  22. Add the rest of the cream and fold until the mixture is silky smooth.
  23. Weigh the mixture and divide it into two.
  24. Loosen the green tea paste with a little of the cheese mixture so it blends easily.
  25. Stir the green tea into one half of the mixture until the colour is even.
  26. Pour the green layer over the biscuit base.
  27. Level the surface, tapping it as you go.
  28. Freeze for at least 25 minutes until the green layer firms up a little.
  29. Pour the white layer over the green one.
  30. Level it with a spatula, then shake the tin so it settles evenly.
  31. Freeze until the cheesecake is completely solid.
  32. Release the base of the cheesecake from its lining.
  33. Dust the top with green tea powder.
  34. Clean the edges, then peel away the plastic and lift off the ring.
  35. Warm a knife and slice the cheesecake for clean cuts.
