Hokkaido Cheese Tarts

  1. Let the cream cheese sit at room temperature for about 15 minutes, then soften it with a spatula.
  2. Add sugar, vanilla, and salt, then mix until combined.
  3. Switch to a whisk and stir until no lumps of cheese remain.
  4. Add one small egg and stir until combined.
  5. Sift the cornstarch into the mixture and stir just until combined.
  6. Warm the whipping cream for about 20 seconds, then pour it into the mixture in stages while stirring.
  7. Move the mixture to a pot and cook over low heat, stirring constantly, until it thickens and bubbles.
  8. Turn off the heat, add the unsalted butter, and stir until smooth.
  9. Transfer the cheese custard to a container, cover with cling film touching the surface, and let it cool.
  10. Beat the softened butter with salt, vanilla, and powdered sugar until creamy.
  11. Add two egg yolks and mix until combined.
  12. Add the medium protein flour in two additions and fold with a spatula.
  13. Bring the dough together by hand briefly, just until no flour remains.
  14. Wrap the dough and chill or freeze it for 20 to 30 minutes until firm.
  15. Roll the dough between two sheets of plastic to 3 to 4 mm thick.
  16. Cut the dough with a ring slightly larger than the tart moulds.
  17. Press the dough into the foil moulds so it hugs the corners.
  18. Trim the excess dough with a knife and prick the bases with a fork.
  19. Chill the shells until completely firm.
  20. Preheat the oven to 160 degrees Celsius and bake the shells for 20 to 24 minutes until golden brown.
  21. Raise the oven to 210 to 220 degrees Celsius.
  22. Loosen the chilled cheese custard and transfer it to a piping bag.
  23. Fill each tart shell generously and smooth the top with a spoon.
  24. Chill the tarts for about 20 minutes until firmer.
  25. Mix one egg yolk with a teaspoon of milk and brush it over the tarts.
  26. Bake for about 10 minutes until the tops are beautifully coloured.
