Steps

  1. Brush the pie moulds thinly with margarine, then set them aside.
  2. Put 100 gr of margarine, 40 gr of powdered sugar, and 1 egg yolk into a bowl.
  3. Mix at medium speed for about 2 to 3 minutes until smooth and evenly combined.
  4. Add 20 gr of milk powder and 210 gr of all-purpose flour.
  5. Stir until evenly combined, then carry on kneading by hand until the dough can be shaped.
  6. If the dough feels too dry, add 1 tsp of water.
  7. Take about 35 gr of dough, then press and smooth it into the shape of the mould, repeating until all the dough is moulded.
  8. Prick the base of the dough with a fork so it does not puff up while baking.
  9. Preheat the oven for about 10 minutes, then bake the tart shells on the lowest rack at 170 degrees Celsius with top and bottom heat for about 15 minutes until two thirds cooked.
  10. Take the tin out of the oven, then set it aside.
  11. For the custard, mix 40 gr of granulated sugar with 120 ml of liquid milk and 120 ml of liquid whipping cream, stir until combined, then set aside.
  12. Dissolve 10 gr of cornstarch in 1 tbsp of water, then stir it together with 1 whole egg and 1 egg yolk until evenly combined.
  13. Cook the milk, sugar, and whipping cream mixture over low heat while stirring constantly until it boils, so the bottom does not scorch.
  14. Take one ladle of the hot mixture, pour it into the cornstarch and egg mixture and stir until combined, then pour it back into the pot while stirring quickly so it does not form lumps.
  15. Add a pinch of salt, 1 tsp of vanilla, and 100 gr of grated cream cheese or quick melt cheese.
  16. Keep cooking while stirring constantly until it boils, thickens, and bubbles up, then turn off the heat.
  17. Strain the custard while it is still hot if it feels lumpy, let it cool to warm, then transfer it into a piping bag.
  18. Pipe the cheese custard into the baked tart shells until they are full.
  19. Brush the surface of the custard with 1 egg yolk.
  20. Preheat the oven for about 10 minutes, then bake on the middle rack at 200 degrees Celsius with top and bottom heat for about 10 to 15 minutes until the egg wash turns golden brown.
  21. Take the tin out of the oven and let the tarts cool completely before turning them out of the moulds, so they do not fall apart.
