  1. Beat the room temperature unsalted butter with the sifted icing sugar, salt and vanilla only until soft, not until aerated.
  2. Add 40 g of beaten egg and mix until combined.
  3. Switch to a spatula and sift in the medium protein flour in two additions, folding as you go.
  4. Mix until no flour remains and it forms a dough, then bring it together by hand. Do not overwork it.
  5. Wrap the dough in plastic and chill it for at least 30 minutes, or 20 minutes in the freezer to firm it up faster.
  6. Roll the dough between two sheets of plastic to a thickness of about 3 to 4 mm.
  7. Lift the dough into a 20 cm loose bottom pie tin, press it into every corner, trim the excess with a knife, then firm up the sides.
  8. Prick the base of the shell with a fork so it bakes evenly and does not balloon.
  9. Freeze for 15 minutes while preheating the oven to 160 C with top and bottom heat.
  10. Line the shell with baking paper and fill it with rice as weights, making sure the rice reaches every corner.
  11. Blind bake for 15 minutes.
  12. Remove the paper and rice and bake again until the shell is cooked and golden, about 30 minutes in total.
  13. For the filling, soften the room temperature cream cheese with the salt and vanilla using a spatula.
  14. Add the castor sugar and mix until smooth, then switch to a whisk and beat until fully soft.
  15. Add one egg and mix until smooth.
  16. Add the cornstarch as a binder and mix until combined.
  17. Pour in the plain liquid whipping cream and stir until smooth.
  18. Add the full cream milk a little at a time and stir until combined. If it goes lumpy, just strain it.
  19. Raise the oven to 170 C, then pour the cheese mixture into the cooled pastry shell.
  20. Tap it lightly to release air and bake for 16 to 17 minutes, until the centre still jiggles. Do not overbake.
  21. Once it is no longer hot, release the tart from the tin and move it onto a plate.
  22. Torch the surface for the burnt effect, then slice and serve.
