  1. Crush 110 g of Regal biscuits into fine crumbs.
  2. Mix the biscuit crumbs with 40 g of melted unsalted butter.
  3. Stir until the mixture looks like wet sand.
  4. Tip it into a tin lined with baking paper and press the base down.
  5. Compact it evenly, then chill until it firms up.
  6. For the crumble, combine 110 g of all-purpose flour, 40 g of icing sugar, and 15 g of brown sugar.
  7. Add 1/8 tsp of salt and 1/2 tsp of vanilla.
  8. Stir the dry ingredients until combined.
  9. Add 70 g of cold unsalted butter, cut into small pieces.
  10. Cut it in with a pastry cutter until the mixture turns crumbly.
  11. Chill the crumble until you need it.
  12. Preheat the oven to 180 to 190C.
  13. Soften 365 g of room temperature cream cheese with a spatula.
  14. Add 100 g of caster sugar.
  15. Add 1/2 tsp of vanilla.
  16. Add 2 pinches of salt and the zest of half a lemon.
  17. Beat until the cream cheese is completely soft and creamy.
  18. Swap the spatula for a whisk and beat until lump free.
  19. Add 2 eggs one at a time, mixing until combined after each.
  20. Sift 2 tbsp of cornstarch into the batter and mix until combined.
  21. Pour in 155 g of liquid whipping cream and mix until combined.
  22. Add lemon juice and mix until the batter is creamy.
  23. Pour the cheesecake batter over the chilled biscuit base.
  24. Spread it right into the corners of the tin.
  25. Tap the tin so it levels out with no air bubbles.
  26. Scatter plenty of frozen blueberries over the batter.
  27. Cover with the chilled crumble until the surface is hidden.
  28. Add a few more blueberries on top of the crumble.
  29. Bake in the preheated oven for 30 to 35 minutes until the crumble browns.
  30. Cool at room temperature, then freeze for 1 to 2 hours until set.
  31. Turn it out of the tin and slice with a serrated knife.
