Apple Crumble Stuffed Cookies

  1. Peel the granny smith apples, cut out the cores, and dice them small.
  2. Cook the sugar in a pan until it turns to caramel, then lower the heat right down.
  3. Add the butter to stop the caramel from cooking further, and stir it in.
  4. Stir in the all-purpose flour as a thickener along with the ground cinnamon.
  5. Add the diced apple, salt and vanilla, then cook over low heat until the apple softens and the caramel thickens and coats it.
  6. Spread the apple compote thin on a plate so it cools quickly, then chill it.
  7. Mix the all-purpose flour, brown sugar, powdered sugar, salt and vanilla for the crumble.
  8. Add the cold unsalted butter cut into small pieces and work it in with a pastry cutter until it looks like sand.
  9. Chill the crumble for about 15 minutes until cold.
  10. Squeeze the crumble into larger clumps, scatter it on a tray, and bake at 160C for about 20 minutes until nicely coloured, then cool it.
  11. Beat the room-temperature butter with the salt, vanilla, brown sugar and castor sugar until creamy and half aerated.
  12. Add one egg and mix until combined.
  13. Switch to a spatula, add the all-purpose flour and baking soda, and fold until it becomes a dough with no dry flour left.
  14. Cover the cookie dough and chill it for about 30 minutes until firm.
  15. Preheat the oven to 170 to 180C, then weigh out 60 g portions of dough, setting aside 15 g of each for the lid.
  16. Flatten the larger piece into a cup, fill it with the apple compote, cover with the reserved dough, then seal and roll it round with no trapped air.
  17. Roll each ball in the baked crumble until generously coated, set them on a tray, then flatten them slightly.
  18. Bake in the preheated oven, then round the edges back into shape while they are still hot.
