Apple Crumble Pie

  1. Whisk the all-purpose flour, icing sugar and salt together in a bowl until evenly combined.
  2. Add the cold unsalted butter, cut into small cubes.
  3. Cut the butter into the flour with a pastry cutter until the mixture looks like sand and no lumps of flour remain. Avoid working it with your hands so the butter does not melt.
  4. Add the ice water a little at a time, roughly 2 to 3 tablespoons, and mix only until the dough comes together. It should be neither too wet nor too dry.
  5. Turn the dough onto a sheet of plastic, press it together once or twice, then wrap it. Do not overwork it or the pastry will turn out tough.
  6. Chill the pastry in the fridge or freezer for about 20 minutes.
  7. For the crumble, whisk the all-purpose flour, icing sugar, brown sugar and salt together until evenly combined.
  8. Add the cold cubed unsalted butter along with the vanilla extract.
  9. Cut it in with a pastry cutter until the crumble looks like sand, then chill it for about 20 minutes until firm.
  10. Peel the apples, remove the core and seeds, then chop them into small pieces.
  11. Put the granulated sugar in a pan and cook, stirring occasionally, until it turns into a golden brown caramel. Do not let it get too dark or the caramel will taste bitter.
  12. Add the unsalted butter to stop the caramel from cooking further, and stir over low heat.
  13. Stir in the all-purpose flour and the cinnamon powder until combined. The flour thickens the filling so it does not stay runny.
  14. Add the chopped apples and cook over low heat until they release their juices, start to soften and the filling thickens.
  15. Turn off the heat and set the apple filling aside until it is no longer hot.
  16. Roll the pastry out to about 3 to 4 mm thick.
  17. Lift the pastry into a 20 cm loose bottom pie tin and press it evenly into the base and corners.
  18. Trim the excess pastry at the rim with the back of a knife and neaten the sides right up to the top so it will not shrink down.
  19. Prick the base of the pastry with a fork so it bakes evenly and does not bubble up.
  20. Freeze the pastry case until it is completely hard.
  21. Preheat the oven to 170 C. Line the pastry with paper, fill it with rice or beans as weights, and blind bake until half cooked.
  22. Remove the weights and paper, then fill the case with the caramel apple filling.
  23. Cover the apples completely with the crumble so none of the filling shows.
  24. Bake again at 170 C for 20 to 30 minutes until the crumble is golden brown.
  25. Let it cool, release it from the tin and serve with vanilla ice cream.
