Purple Sweet Potato Bugis Mandi in Coconut Porridge

  1. Put the thinly sliced palm sugar, a little water, a pandan leaf and salt into a pan.
  2. Add the grated coconut and cook over low heat until the coconut absorbs the palm sugar and becomes a coconut filling.
  3. Cook until the liquid has gone but the filling is still moist, not bone dry, then take it off the heat and let it cool.
  4. Mash the steamed purple sweet potato until completely smooth, like mashed potato.
  5. Add the salt, glutinous rice flour and rice flour to the mashed sweet potato and mix.
  6. Heat the coconut milk in the microwave or in a pan until boiling.
  7. Pour the hot coconut milk in a little at a time, stirring first with a fork, then knead by hand. Be careful, it is hot.
  8. Knead until the dough is smooth, neither dry nor wet, and can be shaped. Add a little more coconut milk if it feels dry.
  9. Weigh out 20 g portions of dough and 15 g portions of coconut filling, and keep the dough covered with a damp cloth so it does not dry out.
  10. Flatten each piece of dough into a bowl shape, fill it with coconut filling, and close it up slowly so no air is trapped inside, just like wrapping a nastar.
  11. Roll it in your hands until the surface is smooth and fully sealed.
  12. Brush banana leaves with oil and arrange the balls on top.
  13. Steam over medium low heat for 15 to 17 minutes.
  14. Brush the cooked cakes with oil so they do not stick or dry out, then keep them covered.
  15. For the coconut porridge, put the liquid coconut milk, cornstarch and salt into a pan with the heat off, and stir until there are no lumps.
  16. Add the pandan leaf and cook, stirring constantly, until it thickens and bubbles like a custard.
  17. Pour the porridge into a 20 x 20 cm aluminium foil tray, shake it level, and remove the pandan leaf.
  18. Arrange the bugis cakes on top of the porridge and serve.
