Soft Rice Flour Layer Cake (Kue Lapis)

Open offline saves

Ingredients

Steps

  1. Pour the water into a pot, then add the sugar, vanilla essence, a little salt, the instant coconut milk and the pandan leaves.
  2. Stir until even, then cook over medium heat, stirring constantly so the coconut milk does not split.
  3. Once it boils and the pandan aroma comes out, turn off the heat and let the coconut milk cool completely.
  4. In a separate bowl, mix the rice flour with the tapioca starch until even.
  5. Pour in the cooled coconut milk and stir with a balloon whisk until all the flour is fully dissolved.
  6. Divide the batter in two, then add the cocoa powder to one half and stir until even.
  7. Strain both batters so the cake turns out smooth.
  8. Heat the steamer until it is full of steam, then brush the moulds with a little cooking oil.
  9. Pour about one tablespoon of the chocolate batter around the edge of the mould, cover the steamer with a lid wrapped in a clean cloth, then steam for 3 minutes.
  10. Pour in the white layer, about half a ladle, then steam again for 5 minutes.
  11. Repeat, alternating chocolate and white, until the moulds are full.
  12. Steam the final layer for 20 minutes until cooked, then lift it out and steam the rest of the batter.
